Chicken Legs w/ Mushroom Cornbread Stuffing

We tend to believe that if something takes more work, it automatically means that it has more value. Of course, anyone that follows this blog knows that I, being a ‘food industry’ person, quick isn’t generally what I’m all about. But in a world that thrives on making things complicated, dare to be simple some times. Enter the Stove Top Stuffing universe….

These chicken leg ‘quarters’ make such a nice meal when paired with stuffing. The smoky bacon flavor, the earthiness of the mushrooms as well as the slight sweetness of the cornbread stuffing complement each other well.

In a society that gravitates towards labels stamped with terms like organic or GMO-free, sometimes the simplicity of quick fix food can be a treat.

Instructions
  1. In a skillet, cook bacon until crisp; remove with a slotted spoon to paper towel. Drain, reserving 2 Tbsp of drippings.
  2. Sauté celery & onion in drippings until tender. Add mushrooms, herbs & seasoning; cook & stir for 5 minutes. Remove from heat; stir in stuffing mix, celery leaves, parsley & bacon. Add broth & gently combine. Set aside.
  3. Preheat oven to 350 F. Grease a 13" x 9" baking pan or line with greased foil paper.
  4. Wash & trim any excess fat from chicken leg quarters. Loosen skin over thighs to form pockets for the stuffing.
  5. Fill thigh 'pockets' with stuffing & place in baking pan. Place any remaining stuffing around the 2 leg quarters to bake at the same time. Cover with foil for about 30 minutes then uncover & finish roasting until chicken is cooked through & stuffing is lightly browned.

Roasted Garlic Chicken w/ Asiago Gravy

Tender, juicy roasted chicken leg quarters are easy to prepare and delicious. The leg quarter is made up of the thigh, drumstick and part of the back of the chicken. It’s named a quarter because it consists of about a quarter of the whole bird. The dark meat takes well to roasting and yields moist and flavorful chicken.

Asiago has long been a favorite cheese of Brion & I. It is a brilliant cheese to bake into bread for a cheesy treat or grate over soft pretzels before baking. It also works particularly well with chicken dishes.

Asiago is a whole milk cheese that originated in Northern Italy, around the Po River Valley where Italy borders Austria. Coming from the mountains, Asiago is similar to other mountain cheeses, such as Switzerland’s Gruyere or France’s Beaufort. Asiago is made in large wheels designed for long-term aging to get through tough winters. Dense and flavorful, Asiago’s flavor profile changes as time polishes the wheels over the course of several months or years. Taken from the milk of cows grazing on the grasses and wildflowers of the mountains, Asiago can have a fresh, fruity flavor or a savory, zesty taste on the palate.

This is a very simple recipe but has an amazing flavor and is well worth trying, especially if your an Asiago lover.

Instructions
  1. In a saucepan, fry bacon, blot on paper towel & set aside. Add the seasoned chicken & brown, about 3-5 minutes per side. Set aside.
  2. Add onion, mushrooms & garlic to saucepan; sauté until tender crisp & lightly browned, about 3-5 minutes.
  3. Sprinkle in the thyme & flour; cook for a minute.
  4. Add the broth & deglaze the pan by scraping the brown bits off the bottom of the pan with a spoon while the broth is sizzling.
  5. Preheat oven to 400 F. Mix asiago cheese into the sauce & season with salt & pepper to taste.
  6. Add the chicken, cover with a lid or foil & roast for 15 minutes. Alternately, you can turn heat down to a medium-low & simmer on top the stove for 15 minutes.
  7. Add crumbled bacon to sauce after roasting. Serve.

Honey Mustard Chicken Legs

Honey mustard is one of those condiments you either really like or you hate it. I recall when one of my nephews was just about ‘knee high to a grasshopper’, he just LOVED it.

When he would dip that little KFC chicken nugget in some honey mustard, I think his eyes actually glazed over as he inhaled that flavor. It was just so incredibly cute to watch.

Combining honey with mustard brings out flavors not readily apparent in a straight honey. These two ingredients, when combined, flavor a variety of otherwise bland dishes such as chicken and pork. It’s often used in salad dressings, sandwich spreads, meat or veggie dips, ham glaze etc.

There seem to be many versions due to the fact that there are multiple types of honey and mustard. Although it is very often combined with mayo, I prefer it without. If you like this flavor, these ‘legs’ are for you!

  1. Preheat oven to 350 F.
  2. In a bowl, whisk together mustard, honey & olive oil. Add a pinch of salt & pepper to taste. In a baking dish, place the chicken pieces, skin side up. Pour mustard/honey mixture over all & place sprigs of rosemary between them.
  3. Bake about 45 minutes or until cooked. Remove from oven & serve.

Stuffed Chicken Leg Quarters

The versatility of chicken, as well as the ease and speed with which it can be cooked make it one of the most popular meats around.

Chicken leg quarters, also referred to as whole chicken legs, consist of both the thigh and drumstick. This cut is sold bone-in/skin-on and for most part, quite economical. Because they are dark meat and many people prefer white meat, chicken legs are often over looked by the consumer.

I like to purchase these with six fresh leg quarters to the package. Usually you will find a bit of extra fat on them which needs to be trimmed as well as the backbone rinsed out. Freezing them in a meal size portions makes it so handy when ready to use.

Roasting them in a real slow oven temperature with just a little oil, salt & pepper always produces tasty results. After they have baked for an hour you can always turn up the temperature for a few minutes to crisp the skin if you wish.

Today, I thought it would be nice to do something a bit more special. Stuffing them with a veggie-cheese mixture not only tastes great but they had a nice visual effect on our plates.

  1. In a saucepan, melt butter, add onion & peppers; saute until tender crisp. Add grated zucchini, continue to cook for 2 minutes.
  2. Remove from heat & place in a bowl. Add breadcrumbs, egg, salt, pepper & cheese. Refrigerate until cold.
  3. Preheat oven to 350 F. Using fingers, loosen skin on chicken legs. Spoon some filling into each chicken leg working the stuffing down the drumstick. Combine the 2 Tbsp melted butter, dry mustard & Dijon mustard together & brush over chicken. Place the chicken in a shallow baking dish & bake for about 45 minutes or until cooked through. Remove from oven & serve.

Oven Barbecued Chicken

Its only March, so BBQ season is till a few months away. Some would claim that good ‘barbecued’ food can only come from the grill, not the oven. But what about during our winter months or times when you just don’t feel like firing up the grill or you’re out of propane? Let’s face it, nothing can replace a good outdoor barbecue, but..

The key to oven BBQ chicken is to start with bone-in pieces. Chicken leg quarters are fairly fatty in comparison to chicken breast so it takes a lot to dry a chicken leg out. Which brings me to a recipe I clipped from a newspaper back in 1970 for OVEN BARBECUED CHICKEN. The ingredient list is rather lengthy but all pretty common place items. Brion likes this meal served with roasted potatoes.

In the month of March our family celebrates three birthdays. Today, March 21st would have been my Dad’s. He passed away at the age of 92, 12 years ago. Our Dad was a man of discipline; love was closely associated with duty and commitment for him. He was confident in who he was and didn’t demonstrate any need to conform to what we might have wanted him to do. Everything he undertook was driven by his commitment to honor and provide for the family that he loved.

Instructions
  1. Preheat oven to 375 F. Have available a large baking dish that will hold chicken in a single layer. Combine flour, 1 tsp salt, paprika & 1/4 tsp pepper in a heavy plastic bag. Place chicken in bag & shake to coat evenly. In a heavy, large skillet, heat margarine & oil.

  2. Add chicken & brown slowly on all sides; place in baking dish. Add onion & garlic to pan; cook gently for 3 minutes. Add all remaining ingredients, cover & simmer 10 minutes.

  3. Pour this mixture over chicken, cover the pan & bake 15 minutes. Turn chicken legs, cover again & bake about 15 minutes more. Remove cover & continue baking until legs are tender, basting often with sauce, about 20 minutes.
