No matter what the stuffing or style is, love for the empanada is not a difficult one to understand. They are cheap, easy to eat, transportable, and versatile.
Empanadas look as good as they taste; perfect food for a picnic. Eating outdoors, spaced apart is probably one of the safest ways to gather during the ongoing pandemic crisis. The great thing about picnicking is that you can do it practically anywhere you can throw a blanket down. If you can’t make it to a park or field, your yard, porch or any flat surface with a little grass (or sand), some sun (& shade) will do.
Empanadas can be eaten for breakfast, lunch and dinner. They can be served as appetizers or snacks (hot or cold), but they can easily make a full and satisfying main course.
The very basics for an empanada are a combination of three things; dough, filling and a cooking method. The dough can be made from wheat flour, cornmeal, mashed plantains, potatoes, yuca, sweet potatoes etc. and the fillings can consist of meat, fish or vegetables. The cooking method is usually to be baked or fried although some can be cooked on a griddle or grill.
According to food historians, empanadas with seafood filling first appeared in a 1520 cookbook, published during the Moorish invasions.
I was real interested to see what I could do to make some salmon empanadas taste special. We found they were good as a hot meal served with the remaining ‘sauce’ or eaten COLD for a picnic lunch.

Instructions
Cornmeal Pastry
In a small bowl, combine sour cream & ice water; set aside. In a large bowl, whisk together flour, 1/2 cup cornmeal, sugar & salt. Using a pastry blender or finger tips, cut in butter until mixture resembles both coarse crumbs & small peas. Sprinkle the cold sour cream mixture over dough, tossing with a fork to evenly distribute it. Do NOT overwork dough.
Cover bowl with plastic wrap & refrigerate for at least an hour.
Soy Sauce
In a skillet, melt butter & sprinkle with flour. Allow to cook for a few minutes. In a bowl, whisk together broth, milk & soy sauce. Slowly add to flour/butter mixture, stirring constantly until sauce thickens. Remove from skillet & set aside.
Filling
In the skillet, sauté salmon filet in 1 Tbsp oil until JUST cooked. Remove to a dish. With a fork, 'shred' salmon; set aside.
In the skillet, sauté vegetables in remaining Tbsp of oil for a couple of minutes. Add seasonings, shredded salmon, 1/3 cup prepared soy sauce & grated cheddar. Toss to combine; set aside to cool.
Assembly & Baking
Divide chilled pastry into 10 balls. Roll each one in cornmeal. Place a ball between 2 sheets of plastic wrap & roll into a 6-inch circle.
Divide filling into 10 portions. Place a portion on one side of the pastry circle, leaving about a 1/2-inch border (on filled side). With your fingertips, moisten edge of pastry with a bit of milk or water. Flip opposite side over filling & press edges together to enclose it well. Use a fork to make the classic look.

Repeat with remaining pastry & filling. Lay empanadas on a baking sheet lined with parchment paper. Bake for about 20 minutes or until pastry is baked & slightly browned.
CELEBRATING FATHER’S DAY!
Honoring your father on Father’s Day doesn’t require his physical presence. I feel what is more important, is just the act of doing it. I am very grateful to have had a father who was such a strong role model in my life. Everything he did was driven by his commitment to provide and care for the family he loved.
My father passed away in 2005 and Brion’s in 2011. Both our Dad’s loved to talk and tell stories from their lives. We often wish we could retrace that time and hear their voices again. It seems you never fully appreciate your parents until they are no longer on this earth. It is so important to appreciate every hour they are in your life.
My special meal to honor them on this Father’s Day, is a nice medley of pork, shrimp and mushrooms.

Seafood Stuffed Pork Medallions with Peppercorn Sauce

Instructions
Stuffed Mushrooms
Shred zucchini, sprinkle with a little salt & set aside. In a bowl, combine the cheeses, crumbled bacon, egg & seasonings. Squeeze as much liquid from zucchini as possible. Add it to the filling & mix well. Divide the filling between mushrooms. Place a small amount of Zesty Italian dressing in a cup. Dip bottom of each mushroom in dressing & allow to dip off for a few seconds. Place stuffed mushroom caps on a small baking dish making sure they will stay upright. Place in fridge until ready to bake.
Parmesan Shrimp
In a bowl, combine oil, garlic, oregano, basil, Parmesan, salt & pepper. Add shrimp & toss gently; thread onto skewers. Place on a plate & refrigerate until ready to cook.
Stuffing / Tenderloin
In a saucepan, saute garlic & shallots in 1 Tbsp olive oil for a few minutes. Add a few pinches of salt & pepper; stir in breadcrumbs. Add water; stir till all is combined & transfer to a bowl.
In a bowl, cream together butter & cream cheese. Add 1/2 of the capers, the parsley & stir thoroughly. Add the Gruyere & scallops, stirring gently. Set aside.
'Butterfly' tenderloin & pound making it all the same thickness. Spread stuffing evenly on flattened cut side. Starting with the long side, carefully ROLL the tenderloin as opposed to just FOLDING it over. On work surface, lay out bacon strips side by side. Lay stuffed tenderloin at one end & roll up in bacon strips, placing a toothpick at end of each strip.
Preheat the oven to 400 F. In a skillet, heat remaining 2 Tbsp olive oil, add the roast carefully & saute for about 3-4 minutes on each side to cook the bacon a bit. Place a rack in a shallow roasting pan & lay stuffed tenderloin on it; bake at 400 F. for 10 minutes, then reduce heat to 350 F. & bake for another 20 minutes. Remove from oven, set the roast on a cutting board, cover loosely with foil, & let rest while the shrimp & stuffed mushrooms are cooking. When ready to serve, slice into 1 - 1 1/2" thick 'medallions'.
Increase oven temperature to 400 F. Remove stuffed mushrooms from refrigerator, bake for 20-30 minutes or until filling is golden & mushrooms have softened. Meanwhile, line a baking sheet with foil, place skewered shrimp in oven for the last 6-8 minutes of cooking the mushrooms.
Peppercorn Sauce
This can be made earlier or while the last items are cooking in the oven. In a hot skillet, add butter, shallots & peppercorns; stir until shallots are golden, about 1 minute. Add broth & thyme sprigs; reduce heat & allow sauce to simmer for a few minutes. Remove thyme sprigs. Add cream & salt & pepper to taste. If you wish to thicken sauce, combine cornstarch & water in a small dish, stirring until smooth. Add a bit at a time to your hot mixture, stirring until desired thickness is achieved.
Today I have tried to incorporate another favorite ‘recipe’, this one is derived from the taste of my mother’s turkey/chicken stuffing. Most homemakers of her time did not have the luxury of opening their kitchen ‘spice drawer’ with all its many little bottles. Something I remember well, was this brown bag my mother always kept in the bottom of one of her kitchen cupboards. When I looked inside, what I found was some dried, prickly plant that had a wonderful smell. To this day, I’m not sure what it was, but every time she made stuffing she would crumble some of it into her mixture. For years, I have tried to recreate that exact taste in my own bread stuffing. The Savory Herb & Apple-Zucchini Bacon Burger  filling seems to have captured that ‘taste of a memory’ fairly close I think. The mixture seems to work well in anyone of the three meats used in the ‘Basic Meat Patty’  recipe from the previous blog in my ‘Stuffed Burger Series’.

- 100 grams, (2 slices) dry bread crumbs, (I like to use a chia-flax bread, pulsing it to a fairly fine crumb in a food processor
- 3 Tbsp margarine
- 1/3 cup onion, finely chopped
- 1 celery stalk, finely chopped
- 1 Tbsp garlic, minced
- 55 grams fresh mushrooms, finely chopped
- 150 grams (1 large) potato, cooked & mashed
- 1/2 cup chicken broth
- 1 tsp sage leaves, dried
- 1/2 tsp thyme, dried
- 1/2 tsp savory leaves, dried
- 1/2 tsp salt
- 1/4 tsp pepper
- 8 slices cheese, your choice ( Cheddar, Gorgonzola, Monterey Jack, Havarti )
- 8 Ciabatta buns or your choice

Savory Herb Stuffing

Boil potato in salted water. Drain & mash; set aside. Saute onion, celery, garlic, mushrooms & seasoning in margarine. Remove from heat. Combine with fine bread crumbs, mashed potato & chicken broth.

This stuffing will be enough for 8 burgers so you will need to double the 'Basic Meat Patty' recipe, using the meat of your choice. Divide stuffing mixture into 8 and place in the center of 8 meat patties. Flatten filling slightly, then place remaining 8 patties on top. Seal edges well.

Place burgers on a greased piece of foil & place on a preheated barbecue grill over medium heat. Close lid & grill. Halfway through cooking time, turn & place a slice of cheese on each burger. Finish cooking, remove from grill & serve on slightly grilled buns. Lettuce & tomato slices with a little mustard all add to the nice flavor of this combo.
Apple-Zucchini Bacon Stuffing

Using the SAVORY HERB STUFFING recipe, OMIT the MASHED POTATO. Instead, add the apple & zucchini; saute with the veg/seasoning mixture. Combine all with crisply fried bacon & chicken broth.
