Mexicali Quiche w/ Avocado & Roasted Tomatoes

There are so many great things to make with tortillas. You can load up burritos for breakfast, stuff some quesadillas with shrimp or make tortilla chips and cover them with cheese, guacamole and spicy salsa.

A tortilla quiche combines a classic breakfast quiche and a tortilla tart without having the traditional pastry crust.

Breakfast for supper is always good with Brion & I. Making this meal a day ahead of serving it allows the flavors to become exceptional.

Mexicali Quiche w/ Avocado & Roasted Tomatoes
Instructions
  1. In a skillet, cook ground pork, onion, mushrooms & garlic. Cook until meat is brown & crumbly & moisture has mostly evaporated from the mushrooms. Stir in corn, beans, chili powder & cumin. Remove from heat.
  2. Preheat oven to 350 F.
  3. In a bowl combine eggs, milk, green chili peppers (if using), salt & pepper. Grate cheese.
  4. Lightly butter bottom of an 8-inch baking dish. Place one of the tortillas on the bottom of dish; sprinkle with a bit of grated cheese & top with half of the pork mixture. Tear other tortilla into pieces & place on top then sprinkle with a bit more cheese & remaining pork mixture.
  5. Carefully pour milk mixture over quiche then top with remaining cheese. Bake for about 30 minutes or until set.
  6. While the quiche is baking, place cherry tomatoes in a foil lined baking pan, drizzle with olive oil & roast until skins pop.
  7. On a plate, mash avocados; add salt, garlic & lime juice. When quiche is ready, top with avocado mixture & roasted tomatoes. Serve.

CELEBRATING ST. PATRICK’S DAY!

The term ‘green food’ can mean several things. More and more households are ‘going green’ with their menus, buying food from sustainable local sources. People who are ‘eating greener’ include those who grow their own food and compost all their waste to those who simply take a re-useable bag to the supermarket. Most of us are interested in making decisions that are better for the environment.

Others make immediately think ‘green vegetables’. Then of course there are those who , especially at this time of year, may think of the color green and foods with which to celebrate St Patrick’s Day. There is so much you could do with this holiday in terms of food such as rainbows, leprechauns, shamrocks, pot of gold ………

In North America, St. Patrick’s Day is pretty much just a fun day here. We wear green and we eat green. For the most part, its an excuse to party and drink some green beer. Brion & I aren’t into green beer exactly, so here’s our salute to this Irish day … Avocado Cheesecakes.

Instructions
  1. Preheat oven to 350 F. Line a mini cheesecake pan with paper liners or just use without if the cup bottoms are removable.
  2. In a bowl, combine wafer crumbs & butter until completely moistened. Press crumb mixture into the bottom of each mini cup & set aside.
  3. Beat cream cheese & brown sugar until blended. In a separate bowl, beat eggs. Add remainder of ingredients to the eggs & mix until combined.
  4. Beat egg mixture into cream cheese mixture until well blended. Spoon over crusts, filling to the top of each mini cup.
  5. Bake 15 minutes or until edges are golden & centers are set. Cool completely, then refrigerate for several hours.

Chicken Avocado Flax Crepe Stacks

Flax is a flavor that has always appealed to me. I like it both in the ground or seed form. Flax is sown and harvested much like a spring cereal crop and matures at the same time as wheat. Although its place of origin is unknown, it seems likely it it would be southwest Asia. Flax is one of the oldest textile fibers used by humans.  Evidence of its use have been found in Switzerland’s prehistoric lake dwellings as well as fine linen fabrics being discovered in ancient Egyptian tombs.

Here in Canada, flax is produced as an oil seed crop. Superior oil quality and higher oil content have long been major features of Canadian flax seed, attributed to Canada’s climate. I remember my father growing flax as a trial crop one year in southern Alberta. The thing that made a lasting memory for me was its pretty azure blue flowers and interesting little seed pods. Thinking about that, it must have been in the late fifties or early sixties.

Today, I’m making some crepe stacks using flax-meal in the crepes. It should give a nice nutty flavor to compliment the chicken-avocado filling.

Chicken Avocado Flax Crepe Stacks

Instructions
Flax Crepes
  1. In a blender, combine crepe ingredients & blend for 1 minute at high speed. Scrape down sides; whirl for another 15 seconds. Cover & refrigerate for at least 1 hour or longer. Heat a non-stick griddle (or use a crepe pan). Using a 1/4 cup measure, pour batter on griddle using a circular motion to create the right size of crepe needed. Cook about 2- 3 minutes on each side. When cooked, cool on a wire rack until needed. This batter makes about 10 crepes.

Sauce
  1. In a saucepan, melt margarine; add flour to make a roux & cook for a few seconds. Slowly add milk/broth combo, stirring to combine well. Add spices & continue cooking for about 5 minutes or so. Set aside

Crepe Filling
  1. Mash avocados & add yogurt, spices, lemon juice, onion & sun-dried tomatoes. Set aside. Slice mushrooms & if you prefer, saute for a few minutes otherwise you can leave them raw. Prepare fresh tomatoes, red & green onions. Grate cheese.

Assembly
  1. On a work surface, lay out 3 crepes per person (for 2 people). Spread all but 2 crepes with avocado mixture, leaving a 1/2-inch border on each. Place two of the avocado 'spread' crepes on serving plates. Top each with some chicken, corn, mushrooms, tomatoes, onions, 'sauce' & cheese. Lay another avocado 'spread' crepe on top of each plate & repeat with fillings, sauce & cheese. Now, top each stack with an un-spread crepe. Spread any remaining sauce in a small circle in the center. Top with the remaining filling ingredients & sprinkle with last bit of cheese. When you are ready to serve just give them a few minutes in the microwave & your done! Any remaining crepes can be frozen.

Flax can replace fat or eggs in a recipe:

  • 3 Tbsp  ground flax = 1 Tbsp butter, margarine, shortening or veg oil
  • 1 Tbsp ground flax + 3 Tbsp water = 1 egg  (combine & allow to sit 1-2 minutes before using)
