Mandarin Jelly w/ Chocolate Mousse

The term ‘mandarin’, sometimes called ‘kid-glove oranges’, is characterized by deep orange skin with easy peeling and separation of sections. This popular widely known fruit goes by a variety of names, creating some possible confusion at times as to which plant one is dealing with. Commonly known as mandarin in much of the world, the fruit is most often called tangerine in North America.

The tangerine has a long history. Its name comes from Tangiers in Morocco, the port where the fruit was first shipped to Europe and Florida in the United States in the 1800s. But prior to that, tangerines had been cultivated in China and Japan for over 3,000 years.

This light, summery dessert combines the ever-popular flavor pairing of orange and chocolate. Elegant and easy at the same time. Perfect for a summer dessert!

Jelly
  1. Soak gelatin in juice for 10 minutes. Heat until gelatin & sugar dissolve. It is important not to bring to a boil, otherwise everything will deteriorate. Strain & pour into serving molds to 2/3 of the height. Cover jellies & place in the refrigerator.
Chocolate Mousse
  1. IMPORTANT NOTE: This shortcut mousse sets quickly so wait to prepare it when your jelly is set.
  2. In a medium bowl, combine cocoa powder & instant pudding powder. Add the heavy whipping cream & mix with an electric mixer on medium-high for 1 minute.
  3. Transfer to a pastry bag fitted with a star tip & make a large swirl on top of jelly. Garnish with zest if desired.
Recipe Notes
  • I just used some simple syrup to candy the tangerine zest but they are fine just left plain.

No Bake Mango Cheesecake

No matter how you slice it, cheesecake is truly a dessert that has stood the test of time. From its earliest recorded beginnings to its current iconic status around the world, this creamy cake remains a favorite for dessert lovers of all ages.

The no-bake cheesecake, turned the process of making cheesecake into one that consisted mostly of stirring and chilling. Simply combine cream cheese, milk and Jell-O instant pudding mix, pour into a crust, and chill for an hour or two. The pudding mix sweetens and stabilizes the filling. Essentially foolproof, its a recipe that works every time and tastes custardy and rich with a lighter texture than the traditional cheesecake.

The original recipe for no-bake cheesecake has spawned numerous iterations, many of which were popularized by ‘Jell-O’ itself. The best part about the original formula was that it created harmony between industrialized shortcuts and the real thing. Jell-O eventually launched an entire ‘N0-Bake’ dessert line in 1966.

The simplicity of the recipe makes it endlessly adaptable. Of course, you can use different flavored pudding mixes or add spices or extracts to the filling for extra flavor and variation such as cinnamon, cardamom, lemon zest or almond extract. In addition you can serve the cheesecake with fruit or glaze as I’ve done here .

Crust
  1. Preheat oven to 350 F.
  2. In a small bowl, combine crust ingredients, mixing well. Divide between mini cheesecake pan cups & press down firmly. Bake 5-7 minutes; allow to cool completely.
Cheesecake
  1. In a bowl, beat cream cheese 1/2 cup milk until smooth. Add the remaining 1 1/2 cups milk, cardamom & instant pudding mix; beat until smooth. Divide between mini cheesecake pan cups, filling almost to the tops. Allow to chill for at least 2-3 hours.
Glaze
  1. Place all glaze ingredients in saucepan & heat. As it comes to a boil, lower the heat & simmer 3-4 minutes. Turn off the heat & allow the glaze to cool slightly. Divide glaze between mini cheesecakes & allow it to set for 3-4 hours. Ensure that the cheesecake is properly set before topping with the glaze.
Recipe Notes
  • For a bit of a different look, I filled my cheesecake cups right to the top. Then I poured my mango glaze into a cake pop pan to set a bit. When the glaze was firm enough I topped each cheesecake with one forming a dome instead of a flat layer. 

Shrimp Burgers on Seeded Teff Buns

A while back, I was speaking with my neighbor, Meg, who told me about an ancient grain I had never known about. It is called Teff. This word originates from the Amharic word ‘teffa’ which means ‘lost’ due to the small size of the grain. An annual bunch grass native to the central highlands of Ethiopia and Eritrea. It can survive both wet and dry climates, high temperatures and bright light as well as not being subject to as many plant diseases as other cereal grains. It’s high nutritional value and reliable cultivation have made it Ethiopia’s most important grain crop. Teff’s size makes it convenient because it doesn’t take a large volume of teff seed to plant a field.

Ground into flour, teff is used to make the traditional bread called ‘injera’, a sourdough risen flatbread with a slightly spongy texture similar to a crepe. It can also be found in many gluten-free options of pancakes, breads, cereals, pie crusts, cookies and other snacks.

Meg had given me a package of ‘authentic‘ teff flour so I was anxious to try it. I noticed a great looking recipe for seeded teff rolls on the computer so I was all set. To compliment the teff rolls I made some shrimp burgers w/ avocado aioli. Nice meal!

Seeded Teff Buns
  1. In a small bowl, whisk together water, yeast, honey, oil & vinegar. Let stand 3-5 minutes or until yeast is dissolved & beginning to proof.
  2. In a large bowl, stir together dry ingredients. Add yeast mixture to dry ingredients & mix on low speed until combined. Add in egg whites. Once combined, mix on high speed for 3-5 minutes.
  3. Grease a 9-10 inch round baking pan. Scoop the batter into pan (with a spring release scoop) making about 6 buns. Place rolls right next to each other. Cover & let rise in a warm place for 20 minutes. Preheat oven to 375 F. Bake for 25-30 minutes. Remove from oven; cool slightly.
Shrimp Burgers
  1. In a small bowl, combine all ingredients for shrimp burgers. Form into 4 patties & set on a plate with squares of wax paper between them. Put in fridge until ready to cook.
Avocado Aioli
  1. In a small bowl, Combine all ingredients for avocado aioli until smooth. Cover & set in fridge until ready to use.
Assembly
  1. In a large skillet, add 3 Tbsp oil & turn heat to medium-high. Gently place shrimp burgers on skillet & cook 3 minutes until golden, flip & cook another 3 minutes.
  2. On each of the sliced, warm teff buns, place a shrimp burger with a generous dollop of avocado aioli. Don't hesitate to add some lettuce & tomato slices if you wish.

CELEBRATING MOTHER’S DAY!

Mother’s Day is our time to reflect and show gratitude to the women and mother’s who have been mentors and caregivers; ultimately those who have helped to shape us into who we are.

When my mother passed away in 1978, a friend said to me, ‘she will always be with you’. At that time I hadn’t really understood that comment fully. As the years go by I realized that is so true but of course it is never the same.  Never a day goes by without something  triggering a special memory of her.

Beauty lives deep in the heart of a mother and all she does for her family. This blog is especially to celebrate:  the special memories of my mother for her endless giving of selfless love — my mother-in-law, Dolores, for her loving and kind ways and raising that ‘special’ man  I love sharing my life with — to my sisters, who have given so much of themselves to be such great moms.

My choice of recipe for today’s blog is one that I have always enjoyed to make for special occasions — No-Bake Strawberry Cheesecake.

Instructions
  1. Preheat oven to 325 F. Combine crumbs, coconut & butter; press into bottom of a 9-inch spring form pan. Bake for 8-10 minutes. Remove from oven & cool. Line sides of pan with a strip of parchment paper wide enough to reach the top of pan.

  2. Reserve several strawberries for garnish. Cut two 1/4" slices from center part of enough strawberries to press in a single row of slices around base edge of pan. Cut up remaining strawberries to make 2 cups.

  3. Process strawberries in food processor slightly; add softened cream cheese, sugar, orange & lemon juice. Continue to process until very smooth.

  4. Soften gelatin in cold water; stir over low heat until dissolved. Beat into cheese mixture. Refrigerate until mixture just begins to mound. Fold in 1 cup whipped cream; pour into prepared crust &
    refrigerate for several hours or overnight. Remove cheesecake from pan; carefully remove parchment paper.

  5. Garnish with whipped cream, strawberry slices & fresh mint leaves.


Recipe Notes
  • In the picture for the blog I chose to dip some strawberries to use in the garnish. Other times, I have made a floret of whipped cream on top of each serving piece topped it with a slice of strawberry & a piece of fresh mint.
  • On occasion, I haven't baked the crust if time was of the essence & the cheesecake would be used right away.
  • If you prefer a stronger strawberry flavor the 1 cup of whipping cream can be omitted. The cheesecake seems to have no problem 'setting up' without it.
