Baked Salmon Meatballs w/ Avocado Sauce

Baked salmon meatballs with avocado sauce is a modern fusion dish that combines the ancient tradition of fish balls and meatballs with the more recent culinary trend of pairing salmon with avocado. This dish emerged in the early 21st century as chefs and home cooks sought healthier, low-carb alternatives to traditional meatballs.

Instructions
Salmon Meatballs
  1. Preheat oven to 350 F. Coat a large baking sheet with spray.
  2. Place salmon in the bowl of a food processor. Pulse until finely chopped, scraping down sides as necessary. Transfer to a large bowl.
  3. Add onion, breadcrumbs, cilantro, egg white, garlic, salt, pepper, paprika & oregano. Using a fork, stir to combine.
  4. Using a 2 Tbsp scoop, portion the salmon mixture to form meatballs. Place salmon balls on the prepared baking sheet, spacing evenly.
  5. Bake until the salmon balls are firm to the touch & cooked through, 15-18 minutes. Serve with avocado sauce.
Avocado Sauce
  1. In a food processor, add all sauce ingredients making sure you discard any black spots on the avocado flesh or the sauce will be bitter.
  2. Process the avocado sauce on high speed until smooth. Serve on the side or spoon over the salmon balls.
Recipe Notes

• You will note in my blog picture I rolled the salmon balls in the avocado sauce so they would be evenly covered, just personal preference. I also cut them in half for the sake of the picture to show the insides of the balls.

Spiced Chicken Skewers on Avocado Puree

Materials from which modern skewers are made, range from the traditional wood and bamboo to the glass, metal and other decorative materials.

These chicken skewers are not too spicy and have a variety of vibrant flavors going on like coriander, ginger and mustard. If you like avocado as much as we do then you’ll love the puree that goes alongside the chicken. Yum!

Spiced Chicken Skewers on Avocado Puree
Instructions
Marinade
  1. In a skillet, gently heat the spices for 1 minute or until lightly browned. Transfer to a large bowl. Add the remaining ingredients & stir to combine.
Skewers
  1. Add the chicken to the marinade & coat well. Thread the chicken onto 12 skewers & place in a dish. Cover & refrigerate for 1 hour. Preheat the grill, setting the burners on high. Oil the grate.
Avocado Puree
  1. In a small food processor, purée the avocado with the sour cream & lime juice until smooth. Season with salt & pepper. Set aside in a bowl & cover with plastic wrap directly on the surface.
  2. Grill the skewers for 5 minutes on each side or until the chicken is no longer pink.
Serving
  1. In the center of each serving plate, spread a dollop of the avocado purée. Top with some caramelized red onions & roasted tomatoes. Finish with 2 chicken skewers.
