On a lightly floured surface, knead for 10-12 minutes. Cover with a floured dish towel & allow dough to rest on board for about 15 minutes. Divide dough into 8 sections & form each section into a ball. Push your thumb through the center, creating a hole, (this method prevents the dough ring from separating as there are no seams). Place on a lightly floured surface, cover & let rest 15-20 minutes, rising about halfway & becoming slightly puffy. In a small bowl, mix all topping ingredients together. Set aside.
