An ice cube tray is great for making miniature desserts, storing things like herbs or stock for easy use later on and making unique ice cubes for cold drinks. Trays are now available in many different styles, ranging from the traditional rectangular shape to the 1-inch square to the cocktail style 2-inch sphere as well as a variety of decorative shapes.
The ones made from baking-grade silicone neither melt nor crack. You can use them in a conventional oven, a convection oven or a microwave oven as they can handle up to 450 F.
Good quality, food grade silicone trays are made without petroleum based chemicals, BPA or other fillers. It is safe to store food in them in the fridge or freezer. Silicone trays are actually safer than normal plastic ice cube trays.
Silicone ice cube trays are dishwasher safe, just place them on the top rack and wash with your dishes as usual. Its a good idea to wash the trays each time you use them so that the odors don’t transfer.
Once again, convenient, frozen puff pastry makes the perfect base for a few quick and easy bite size, ice cube tray desserts. You got to love it!!

- 2 frozen sheets of puff pastry, thawed
- 1 egg, lightly beaten
- 80 gm lemon curd or preserve of choice I used 3 different curds I had on hand from other baking projects (strawberry, lemon & kiwi)
- 42 mini white marshmallows
- 100 gm cream cheese, cubed or sliced into 14 equal pieces

- Fold 1 sheet of puff pastry in half. Using a rolling pin, roll slightly until it will easily cover a 14-inch silicone ice cube tray. Cut remaining sheet of pastry in half lengthwise, reserving 1 half for another use.
- Lay rolled pastry over ice cube tray & gently press pastry into each hole, ensuring pastry does not tear.
- Fill each pastry hole with 1 teaspoon lemon curd, a few marshmallows & a piece of cream cheese. Brush edges of pastry with egg. Place pastry half on top, pressing gently to secure. Trim any excess pastry. Freeze for 1 hour or until pastry is frozen.
- Preheat oven to 425 F. Line a baking sheet with parchment paper; set aside.
- Release pastry parcel from the ice cube tray & place flat side down on the prepared baking sheet. Brush with remaining egg.
- Bake for 20-25 minutes or until puffed & golden. Serve warm.
