Bring a pot of salted water to a boil & cook macaroni (or orecchiette pasta) according to package directions. When cooked to al dente stage, drain well, RESERVING pasta water. Drizzle pasta with 1 Tbsp olive oil. Shake it around a bit in the colander to keep it from sticking together.
Preheat oven to 375 F. Lightly butter a 9 x 9-inch baking dish, set aside.
Remove from heat & stir in salt, pepper, sage, Gruyere, cheddar & pulled pork. Combine then add cooked pasta & stir until pasta is evenly covered with sauce. If mixture is too thick, adjust consistency with some reserved pasta water.
Place in a baking dish & bake uncovered for 30-40 minutes or until pasta begins to turn slightly golden brown.
