Bacon Wrapped Shrimp & Scallop Skewers

Bacon-wrapped shrimp and scallops may sound like an appetizer only served at fancy cocktail parties. But tossed in parmesan and spices then wrapped in bacon makes for some incredible skewers to serve with some vegetable couscous as a main dish.

There are all kinds of tasty add-ins to couscous, such as mushrooms and zucchini. Mushrooms add an earthy, savory flavor to couscous that makes it a good complement to main dishes like roast chicken, pork, beef or seafood.

Couscous has become one of my favorite pantry staples. It’s quick, convenient, versatile and makes a good alternative to ‘traditional’ rice or pasta.

Couscous used to be hand rolled into tiny pasta. It is now available in instant- cook packages or bulk, where couscous has already been pre-cooked by steaming and then dried. This leaves us with the simple task of re-hydrating in water or broth, which typically takes something like 5-10 minutes!

Vegetable Couscous
  1. In a saucepan, slightly pre-cook bacon strips. Remove from saucepan onto a paper towel. To saucepan containing bacon drippings, add zucchini, mushrooms, onion, garlic & cilantro paste; sauté until tender crisp. Place in a bowl.
  2. To the saucepan, add broth & salt (if using) & bring to a boil; add couscous. Cover & remove from heat; set aside until liquid has been absorbed, about 5-10 minutes.
  3. Add bowl of vegetables & gently toss with a fork. Keep warm while you cook seafood.
Shrimp & Scallops
  1. Preheat oven to 400 F.
  2. In a bowl, combine oil, garlic, basil, oregano & Parmesan. Add shrimp & scallops; toss gently until well coated then tread on wooden skewers along with bacon strips.
  3. Line 9 x 13-inch baking pan with foil. Place skewers with tip ends resting on pan edges.
  4. Place in oven & roast JUST until seafood is slightly firm & cooked through & bacon is cooked. Serve immediately with vegetable couscous.

Zesty Broccoli & Smoked Cheddar Pizza

HAPPY ST. PATRICK’S DAY!

St. Patrick’s Day is a funny thing here in Canada. It’s the one time each year that people seek out green food and drinks, everything from shamrock shakes, a green bagel, or green beer are part of our version of this holiday.

And what’s funnier, is that this holiday is a very different experience in Ireland. At least that is what I have been told by people who live there. They don’t do all the ‘crazy green stuff’ like we do, if they celebrate it at all.

Green food has been getting more and more ‘creative’ on this particular holiday. Clean eating, green foods like spinach, avocado and broccoli for example. A walk through the grocery store produce section will provide a variety of examples of just how many green foods are available to use in meals and snacks. 

In the spirit of St. Patrick’s Day, I wanted to incorporate some green food in our supper meal. What better excuse could I have to make some broccoli pizzas!

Herb Sauce
  1. In a saucepan, combine butter, cream cheese, milk, garlic & onion powder, basil, oregano, salt & pepper. Heat & stir over medium heat until cream cheese is melted & sauce becomes thick & creamy.
Toppings
  1. Slice grape tomatoes in half lengthwise & marinate in zesty Italian dressing.
  2. Prepare broccoli florets. Steam in microwave dish for about 2 minutes. Drizzle with zesty Italian dressing.
  3. Shred cooked chicken & grate cheese.
  4. Preheat oven to 375 F.
  5. Spread herb sauce over Naan breads & top with shredded chicken. Divide cheese evenly between the 4 Naan breads.
  6. In the center of each pizza lay 6 marinated tomato halves. Place the florets in a circle surrounding them sprinkling veggies with black pepper.
  7. Bake pizzas for 10-15 minutes or until veggies are nicely roasted & edges are crispy. Remove from oven & serve.

Shrimp Chili w/ Cornbread

Cornbread is one of those culinary creations that pairs well with almost anything. Over the years, I have prepared so many cornbread ‘pairings’, I have lost count. Needless to say, I love ‘everything corn’.

When it comes to chili, the version made with ground beef usually comes to mind. Although, Brion & I enjoy the original, this shrimp chili is a nice change up for us seafood lovers.

These little cornbread ‘cakes’ have only a hint of honey. This makes them a good compliment to the spicy chili as opposed to the sweeter, dessert version of cornbread (which, of course is wonderful too!)

March seems like a good month to still enjoy a bowl of chili before our thoughts turn to some lighter meals for the spring & summer.

Shrimp Chili
  1. In a large saucepan, heat oil over medium heat. Add onion; cook, stirring often, until softened, about 3 minutes. Add mushrooms & garlic; cook, stirring for 30 seconds.
  2. Stir in zucchini; cook, stirring often, for 3 minutes. Stir in spices & salt; cook for 20 seconds. Pour in tomatoes with their juice; bring to a simmer. Remove from heat. Stir in shrimp & cilantro. Pour into a 9 x 13-inch baking pan.
Cornbread
  1. Preheat oven to 350 F.
  2. In a large bowl, whisk cornmeal, flour, baking powder & salt. In another bowl, whisk together milk, oil, egg & honey until smooth. Add wet ingredients to the dry ingredients, stirring only until just moistened.
  3. You can either drop heaping tablespoons of the cornbread batter over the shrimp mixture OR bake it in greased individual pans.
  4. Bake until the cornbread is golden brown (& the filling is bubbling) about 40-45 minutes if baked as a casserole. If your cornbread is baked on its own, test the cakes for doneness after about 15 minutes.
  5. Garnish with grated cheddar & sliced green onions before serving.

  • We enjoy the addition of some black beans in this chili as well.

CELEBRATING FATHER’S DAY!

Honoring your father on Father’s Day doesn’t require his physical presence. I feel what is more important, is just the act of doing it. I am very grateful to have had a father who was such a strong role model in my life. Everything he did was driven by his commitment to provide and care for the family he loved.

My father passed away in 2005 and Brion’s in 2011. Both our Dad’s loved to talk and tell stories from their lives. We often wish we could retrace that time and hear their voices again. It seems you never fully appreciate your parents until they are no longer on this earth. It is so important to appreciate every hour they are in your life.

My special meal to honor them on this Father’s Day, is a nice medley of pork, shrimp and mushrooms.

Seafood Stuffed Pork Medallions with Peppercorn Sauce
Instructions
Stuffed Mushrooms
  1. Shred zucchini, sprinkle with a little salt & set aside. In a bowl, combine the cheeses, crumbled bacon, egg & seasonings. Squeeze as much liquid from zucchini as possible. Add it to the filling & mix well. Divide the filling between mushrooms. Place a small amount of Zesty Italian dressing in a cup. Dip bottom of each mushroom in dressing & allow to dip off for a few seconds. Place stuffed mushroom caps on a small baking dish making sure they will stay upright. Place in fridge until ready to bake.
Parmesan Shrimp
  1. In a bowl, combine oil, garlic, oregano, basil, Parmesan, salt & pepper. Add shrimp & toss gently; thread onto skewers. Place on a plate & refrigerate until ready to cook.
Stuffing / Tenderloin
  1. In a saucepan, saute garlic & shallots in 1 Tbsp olive oil for a few minutes. Add a few pinches of salt & pepper; stir in breadcrumbs. Add water; stir till all is combined & transfer to a bowl.
  2. In a bowl, cream together butter & cream cheese. Add 1/2 of the capers, the parsley & stir thoroughly. Add the Gruyere & scallops, stirring gently. Set aside.
  3. 'Butterfly' tenderloin & pound making it all the same thickness. Spread stuffing evenly on flattened cut side. Starting with the long side, carefully ROLL the tenderloin as opposed to just FOLDING it over. On work surface, lay out bacon strips side by side. Lay stuffed tenderloin at one end & roll up in bacon strips, placing a toothpick at end of each strip.
  4. Preheat the oven to 400 F. In a skillet, heat remaining 2 Tbsp olive oil, add the roast carefully & saute for about 3-4 minutes on each side to cook the bacon a bit. Place a rack in a shallow roasting pan & lay stuffed tenderloin on it; bake at 400 F. for 10 minutes, then reduce heat to 350 F. & bake for another 20 minutes. Remove from oven, set the roast on a cutting board, cover loosely with foil, & let rest while the shrimp & stuffed mushrooms are cooking. When ready to serve, slice into 1 - 1 1/2" thick 'medallions'.
  5. Increase oven temperature to 400 F. Remove stuffed mushrooms from refrigerator, bake for 20-30 minutes or until filling is golden & mushrooms have softened. Meanwhile, line a baking sheet with foil, place skewered shrimp in oven for the last 6-8 minutes of cooking the mushrooms.
Peppercorn Sauce
  1. This can be made earlier or while the last items are cooking in the oven. In a hot skillet, add butter, shallots & peppercorns; stir until shallots are golden, about 1 minute. Add broth & thyme sprigs; reduce heat & allow sauce to simmer for a few minutes. Remove thyme sprigs. Add cream & salt & pepper to taste. If you wish to thicken sauce, combine cornstarch & water in a small dish, stirring until smooth. Add a bit at a time to your hot mixture, stirring until desired thickness is achieved.

Tortilla Crepe Stacks

To some of us, Mexican food terms get a little confusing. I mean there is the taco, burrito, quesadilla, enchilada and taquito just to name a few. Before anything, one needs to know what a tortilla is. Simply put, it is wheat or corn plain bread that is used as a wrapping material around different types of filling ingredients to make the various Mexican dishes. 

Masa Harina is a traditional flour used to make corn tortillas and tamales as well as other Mexican meals. To make masa harina, field corn (or maize) is dried and then treated in a solution of lime and water called slaked lime (or wood-ash lye). This loosens the hulls from the kernels and softens the corn. In addition, the lime reacts with the corn so that the nutrient niacin can be assimilated by the digestive tract.

The soaked maize is then washed, and the wet corn is ground into a dough called masa. It is this fresh masa, when dried and powdered, that becomes masa harina. Water is added again to make dough for the corn tortillas or tamales.

Cornmeal and masa harina are very different preparations of corn. Do not try to substitute cornmeal or regular wheat flour in recipes calling for masa harina as they will not produce the same results.

Today, I want to make some tortilla crepe stacks. Crepes as we all know, have always been a hallmark of French cuisine. So the question is, ‘how did they come to be in Mexican cuisine’? In the 1860’s, French forces invaded Mexico. They came, they conquered, they cooked and then they got kicked out. Cinco de Mayo commemorates that victory for Mexico from 1862. However, it took another five years before the French left Mexico for good. During their stay, the French left their mark on the country’s cuisine.

One of the reasons I have always loved crepes, is that they are so easy to make and taste so good. You can either roll the filling inside or just stack them with their fillings and make a ‘cake’.

These tortilla crepes are made with half masa harina and half white flour. Next, I made a mushroom rice & barley pilaf and some guacamole. You can pick and choose when it comes to the extra filling add-ons. I guess it did get a bit more involved but worth it —.

Instructions
Tortilla Crepes
  1. In a blender, beat eggs with milk & oil. Gradually add masa harina, white flour & salt, beat until smooth. Allow to stand for 1 hour or longer. Heat an electric griddle to 350 F. Using a 1/4 cup measure, scoop batter onto griddle. With bottom of 1/4 cup, make circles in the batter, gradually enlarge to size of tortilla you wish to make. I made 3 for each crepe stack. Cook each crepe for a few minutes on each side then remove to a wire cooling rack.

Rice & Barley Pilaf
  1. In a saucepan, saute onion, garlic & mushrooms until tender crisp. Add chicken broth & bring to a boil. Add all remaining pilaf ingredients & reduce heat to simmer. Simmer until barley & rice are cooked & liquid is absorbed. Remove from heat; place in a dish & set aside to cool.

Guacamole
  1. Mince onion & sun-dried tomatoes & mash avocados. In a small bowl, combine avocados, onion, sun-dried tomatoes, & remaining guacamole ingredients. Blend well, cover & refrigerate.

Crepe Stack Fillings
  1. Cook chicken & shred, Grate cheese & prepare all filling ingredients.

Assembly
  1. Spread 4 tortillas with guacamole, reserving a bit for 'decorating' the top of each stack. Over the guacamole, put a layer of rice/barley pilaf. Top each of them with chicken, green peppers, olives, corn, red onion, fresh tomatoes, zucchini, black beans & a sprinkling of cheese. On 2 serving plates, place one filled tortilla topped by a second one. Complete each stack with another corn tortilla. 'Decorate' each with remaining guacamole, salsa, sour cream & remaining cheese. Heat each crepe stack for a few minutes in the microwave before serving.

Parmesan-Shrimp Bread Sticks with Broccoli Cheddar Soup

It seems we never get enough of taking just about anything we do to the next level. Case in point would be pizza dough. It started as a very thin, crispy crust and evolved into whatever thickness you wanted to make it. Enter the ‘stuffed’ crust with a ring of cheese encased in the outer edges of your pizza! Then, of course, the actual pizza fillings can be virtually anything that you choose or have available.

Bread sticks, on the other hand, aren’t something that have remained unscathed either. Probably the original simple design was ‘grissini’ (as they are known in Italy). Today’s bread sticks come in many forms from super crispy, thin ones to the larger ones often served with spaghetti and used to mop up excess sauce. Now, here’s where it gets one step better. Enter ‘homemade stuffed’ bread sticks. For inspiration all you have to do is think about all of your pizza toppings. Use them as options for either mixing into your dough or actually stuffing into a bread stick.

Being shrimp and Parmesan lovers, the natural thing for me to do was  incorporate both into some bread sticks. The next step was to pair them with a nice light broccoli-cheddar soup. A match made in heaven even if I do say so myself.

Parmesan Shrimp Bread Sticks
  1. Combine all ingredients, in the order listed, in a bowl of a stand mixer fitted with a dough hook. Mix on medium-low until the dough comes together. Continue to mix on medium-low for 5 minutes to knead. Dough is ready when it is stretchy & smooth. Transfer the dough to an oiled bowl, cover with plastic wrap & allow to rise for about an hour or until doubled in bulk.
Bread Stick Filling
  1. Peel, devein & slightly chop raw shrimp; place in a bowl. Grate & slightly chop fresh Parmesan cheese. Combine oil, minced garlic, spices & Parmesan cheese with chopped shrimp.
  2. Preheat oven to 425 F. Line a baking sheet with parchment paper. Punch dough down; on a lightly floured work surface, press dough into roughly an 8 X 12-inch rectangle. Top with shrimp filling & sprinkle with dill weed. Slice lengthwise into 8 strips; fold each strip in half enclosing filling. Twist each strip slightly & lay on baking sheet. Top each bread stick with some grated mozzarella cheese (or you could put it on as soon as they come out of the oven). Bake for 7-10 minutes or until golden brown. Serve warm with soup.
Broccoli-Cheddar Soup
  1. In a large saucepan, saute onion & garlic in olive oil until tender. Stir in flour; cook for 1 minute. Gradually whisk in broth. Bring to a boil; cook & stir for 1-2 minutes or until slightly thickened.
  2. Add the broccoli, tarragon, thyme & pepper; return to a boil. Reduce heat; cover & simmer for 10 minutes or until broccoli is tender. Add milk; cook, uncovered 5 minutes longer. Remove from heat; cool to room temperature.
  3. In a blender, process about half of the soup until smooth. Return to saucepan; heat through. Reduce heat. Add 100 grams of cheese; stir just until melted. Serve immediately, garnishing with remaining cheese.
Recipe Notes
  • When time is of the essence and you need to speed up the process, use a tube of purchased refrigerated pizza or bread stick dough instead of making your own. 

Stuffed Baked Potatoes with Garlic Shrimp

Shrimp makes for a unique and elegant twist on a stuffed baked potato. For most part, a baked potato with a pat of butter and a little salt is just great on its own. But stuff them, with an assortment of savory ingredients such as shrimp, oysters or ground meat and it easily constitutes a whole meal.

I think my first encounter with this idea came when the Wendy’s restaurant chain introduced the  Stuffed Baked Potato  to their menu in 1983. Their original goal was to give the customer another choice or alternative to the same old ‘fries’. I think it retailed for 99 cents at the time. The one I remember having a couple of times was with the cheese sauce and fresh broccoli. It tasted great to me, not being a fried food lover.  Of course, since then the whole concept has been ratcheted up in both flavor and eye appeal.

For Canadians, barbecue season lasts until the first snow falls (sometimes even a bit after). This is a meal that can easily be cooked on the BBQ as well as in the oven and it is soooo– good!

Stuffed Baked Potatoes
  1. Preheat oven to 400 F. Rub potatoes with oil & place on a baking sheet. Bake about an hour or until soft to the touch. Let stand until cool enough to handle. Cut a slice off the top of each potato lengthwise. Scoop out pulp, leaving a thin shell. Place pulp in a large bowl & mash.
  2. In a small skillet, fry bacon until crisp. Drain on a paper towel & crumble. Saute green onions in 1/4 cup butter until tender. In a small dish, stir Ranch dressing powder (mix) into sour cream & add to potato pulp along with milk, salt & pepper. Fold in half of the cheese. Divide mixture between potato shells & drizzle with remaining butter. Place baking pan on BBQ where the heat is lower & warm potatoes through while shrimp is cooking.
Garlic Shrimp
  1. In a foil BBQ pan, Gently combine shrimp, olive oil, garlic, oregano, basil, parmigiana-reggiano, salt & pepper. Roast until pink, firm & cooked through, about 6-8 minutes.
To Serve
  1. On each serving plate, place a stuffed potato, top with shrimp & garnish with crumbled bacon & remaining cheese.

Roasted Parmesan Shrimp with Jicama Fries

Years ago, shrimp was low on my personal priority list among seafood. Breaded oysters would never fail to get my attention but somehow tastes change. Brion, on the other hand, loves shrimp and it seems to have rubbed off on me. Strangely enough, deep fried food doesn’t appeal to me and never has. I put it down to the fact that I spent many years in the commercial food atmosphere so that deep frying smell just doesn’t work for me. Now when it comes to oven baked ‘frying’ that’s another story.

Cooking shrimp in the oven preserves the natural flavors. Frying and grilling will cause flavor and moisture loss, which can make the shrimp turn out rubbery after it cooks. In this recipe the shrimp is prepared with a parmesan/garlic coating which bakes up nice and crispy. As a side, I’m making some  jicama fries. If you have never tasted this vegetable, it is very unique. A perfect description would be like a ‘savory apple’. A root vegetable, native to Mexico, sometimes referred to as a Mexican turnip or potato. Then to add a little pizzaz to the meal, I’ve made a garlic avocado ranch dip for both the shrimp and fries.

The classic Ranch dressing has been around since the 1950’s. While very popular in Canada and the United States, it is virtually unknown in other parts of the world. Typically made with buttermilk, onion, garlic, herbs and spices all combined into a mayo based sauce. This low-fat version of  garlic avocado ranch is perfect for this oven fried meal.

Garlic Avocado Ranch Dip
  1. Peel, core & mash avocado. In a food processor, add avocado, yogurt, garlic, herbs, onion powder & lime juice. Pulse a few seconds until well blended. Refrigerate in an airtight container until ready to serve.
Jicama Fries
  1. Peel jicama & cut into french fry pieces. In a saucepot of boiling water, sprinkle 1/2 tsp salt; add jicama fries & boil for 10 minutes. Drain well. In a large bowl, combine fries with oil, 1/4 tsp salt, garlic powder, cumin & smoked paprika. Coat well, blending spices. Preheat oven to 400 F. Spread fries onto a lightly oiled baking pan & bake for about 30 minutes, turning halfway through baking time, until fries are crisp.
Parmesan Shrimp
  1. Preheat oven to 400 F. In a bowl, combine oil, garlic, oregano, basil, parmesan, salt & pepper. Add shrimp & toss gently & thread on wooden skewers. Line a baking pan with foil & lightly oil. Place shrimp in oven & roast JUST until pink, firm & cooked through, about 6-8 minutes. Serve immediately with lemon wedges. jicama fries & dip.
